Coffee Cake

Scott went on a business trip to Florida a few months back.  His boss' wife made a homemade coffee cake for breakfast, and he came home talking about how wonderful it was.  I made him get the recipe, and he was right....It is GOOD!!  And EASY!!
Mix together one box of yellow cake mix, 4 eggs, 8 oz sour cream, and 3/4 cup of vegetable oil.  In a separate bowl, mix cinnamon and brown sugar.  In another bowl, mix 2 cups of powdered sugar with milk and vanilla flavoring for the icing.  Preheat your oven to 350.  Get out a 9 x 13 glass baking dish and spray with nonstick spray.  Put half the cake mixture in the pan then sprinkle with half of the sugar/cinnamon mixture.  Pour the rest of the cake batter then sprinkle again with the remaining sugar/cinnamon mixture.  Cook for 35 minutes.  Pour icing over your cake while it is still hot.  IT IS YUMMY!!  It gets even better the next day!!

Summer Flowers

Last weekend, Mom and I went to Hobby Lobby to pick out flowers for my dad at the cemetery. She didn't really agree with me when I said I wanted a red, white, and blue arrangement. Red, white, and blue just makes me think summer. I have so many summer memories of family beach trips, dad grilling, doing yard work, fireworks, boating and fishing on the Coosa. July 4th is one of my families favorite holidays, so the flowers seemed perfect. Mom worked at a florist when she was like in high school....she has insane floral arrangement and bow making skills.

Mints

Farming season is in full swing which means I have some free times on my hands since my hubby is working LATE.  I love making mints and like to share my hobby with others.  I have improved my mints by now hand painting them so that I can add different colors and make them more detailed.  I also bought more exciting oil flavors, colors, and molds.  Call or email me with any of you mint needs.:)

PCB 2011

Scott and I headed to the beach Wednesday before Memorial Day.  My mom and Rick were in PCB at the same time staying a few condos down from where we stayed.  We stayed at the Holiday Inn Resort for the first time and LOVED it!!  They had a lot to do especially for families.  We were afraid that it was going to be wild and crowded with teenagers on their senior trip, but it wasn't a problem at all.  We enjoyed eating lots of fresh seafood, Shipwreck Island, Coyote Ugly, and RELAXING.  I think it was one of our best vacations EVER.  When you go on a vacation alone, you come home with very few pictures.:(  I need to look into getting a tripod or something.

Junior Turns 5!!??!!

Our first born child, Junior, is 5 years old today. According to my FIL, he has really started to calm down. He loves napping with his mommy, treats, trying to run away, and daddy's auburn blanket. He hates the fly swatter, empty food/water bowls, and wearing clothes. We love you Junior!! ~Mom & Dad
